Why the Old Models Feel Tired

Customers were stuck between two imperfect choices.

Regular QSR gives speed, but often feels lifeless, repetitive, and transactional. Fine dining gives experience, but asks customers to slow down, wait longer, and spend more.

01

QSR

Fast, but monotonous. You order from a board, wait for a number, and leave with very little discovery or connection.

02

Fine Dine

More experience, but slower and less practical for everyday lunch, work breaks, families, and repeat weekday meals.

03

Kolapasi Model

Food you can see, taste, customize, and receive fast — without losing the warmth, aroma, and comfort of slow-cooked Indian food.

The Kolapasi Way

See. Taste. Order.

Indian food has hundreds of dishes, regional styles, spice levels, and flavor profiles. That is exciting — but it can also make ordering stressful.

STO removes the guesswork. You see the curries, taste what interests you, understand the spice level, and build a bowl that fits your day.

See

Look at the curries, rice, sides, and textures before you choose.

Taste

Try flavors first, especially if a dish is new to you.

Order

Build your own bowl and get served with fast-casual speed.

Problems We Solve

Indian food should be easier to choose, easier to personalize, and easier to repeat.

01

Decision-making dilemma

Traditional Indian menus can feel like a 200-dish exam. Kolapasi narrows the choice, shows the food, and helps customers decide with confidence.

02

Unfamiliar dish hesitation

Many guests default to butter chicken because they are unsure what else they will like. STO lets them taste new dishes before committing.

03

Spice spectrum mismatch

Families and friends often compromise around one shared spice level. Kolapasi individual bowls let every person choose their own curry, protein, and heat.

04

Slow table-service wait

A bowl can be assembled quickly, compared with the 20–30 minute wait many customers expect at traditional Indian restaurants.

05

Limited-choice fatigue

Too much choice is confusing. Too little choice becomes boring. Kolapasi hits the sweet spot with a focused menu and 800+ possible bowl combinations.

06

Everyday value

Kolapasi is built for repeat meals, not only occasional dinners — with an average spend around $15 versus $25–$30 at many Indian restaurants.

Built for Busy Professionals

Questions

Frequently asked questions.

What is an Experiential Quick Service Restaurant (EQSR)?

EQSR is Kolapasi’s own format — not QSR, not fine dining. The day’s slow-cooked curries are on open display at the counter: you see the food, taste before you choose, and then build your own bowl. Slow-cooked food, served quick.

How does See. Taste. Order. work?

See the day’s curries at the counter, taste any of them before deciding, then order your bowl: pick a base like lemon rice, ghee rice, biryani rice, or layered flaky parotta, and add dry curries (like Chicken Chukka or Kerala Beef Fry) and wet curries (like Classic Butter Chicken or Chettinad Chicken Curry).

How fast is a Kolapasi meal?

Meals are typically served in 2–5 minutes. The slow cooking happens before service — the wait doesn’t.

How much does a Kolapasi bowl cost?

Average spend is around $15 for a full build-your-own bowl, with more than 800 possible combinations. Menus and prices vary by location.

Does Kolapasi use MSG or artificial ingredients?

No added MSG, no artificial colors, and no artificial flavors — and free water at every outlet, because water should not be commoditized.

Where is Kolapasi located?

Kolapasi started in Chennai, India in 2013 and is building across the United States (Charlotte, Chapel Hill, Greenville, St. Augustine, Malvern), Australia (Melbourne, Gold Coast, Brisbane, Perth), and India, with the Netherlands coming soon.
